I think those sorts of places are mostly opened by some retiree who had a lot of money for capital, but really wanted their relaxing golden years in a small, not-too-busy shop somewhere close to nature. They didn’t really need the money, but with the same energy with which they’d solve a puzzle, balanced things out, along with arranging some government subsidies, to the point where the shop can do a bit better than breaking even mostly by minimizing overhead. Shop can run continuously even with low customer volume. It gets handed off every generation or so.
Her “picture of patience” is on the Tara Scale of Patience. It has its own circle on that venn diagram and doesn’t intersect with the Bev Scale of Patience.
Somehow still open is a shop that know exactly what it’s customer are going to think when coming across it, but also knows that there will always be just enough passerby to keep it open and profitable.
