From the sound of it, Tara moved out around that time, and there was a “Before Beverly” time of not getting any that is significant enough to mention, which could be a few months to a year, which means about seven years ago, or longer. Noah’s been out as trans since he was 16, at the latest, and has had both support and time to “grow into” who he is. (This all assumes a mostly linear timeline, as comics before “Tits Out Thursday #4” were all posted as large blocks. I’d need to dive into the old Twitter Feed to get a better timeline.)
Which is to say, it’s safe to assume the Noah we see is very likely to be the Ideal Noah we will see. Any changes from here are simply a matter of actual time passage.
As a transgender person myself, I honestly find the choice to never portray Noah pre-transition to be very refreshing! So many pieces of media about transgender people made by cisgender people ALWAYS fixate on showing us pre-transition. We don’t need to see Noah from before he transitioned, that just isn’t part of this story.

You missed Noah being “gay” because he’s asexual. They don’t have sex because that’s not what their relationship is about.
And, if the “dabbled with the right woman” they were Bi or Pan, and found a woman they were into. Attraction and sexuality aren’t binaries, they’re a spectrum. You can be Bi, but have a wide or limited range of attraction for one end of the gender spectrum or the other.

I was gonna say, Beverly being demi seems kinda odd since I remember it basically being love at first sight… but then I went back and yeah, demi makes sense. Took weeks for Beverly to fall for her.
It did take a few weeks (not sure how much time passed from the end of “Blast from the Past” to “Unexpected Realization”) but when it hit, it hit like a truck. After that, it was simply Bev actually recognizing that Tara was into women as well.
I almost hope for Tara and Noah deciding to do one last shenanigans TOGETHER against Bev and Sara. But i dont know if that would add or remove from the emotional impact..
Going back, the few times we see her without them are her first appearance (FBI Open Up) and the first few of her story arc (Non-Fuckable Token and The Neverending Journey Begins) When she starts detailing how she “laid it on extra thick” with her previous bed partner in “Kink Assessment” that’s the first time, chronologically, that we see her with the shark teeth.
The first time we see them canonically is in “Unsolicited Advances” when she pounces on Mr. Midlife Crisis. Though if you watch, she has normalish teeth when she starts, and is full sharktooth by the time she’s across the table. It may be a reaction to her crazy showing, as you can see them forming in “A Mind of His Own”, but not in “Mommy Vibes” where she’s keeping the crazy toned down behind the “Mommy” look. And while we see them at the start of “Dan Moves Home #7” when she’s just been pulled away from possible prey and is getting jostled around, they’re mostly gone when she kills the scheme.
I don’t know if it’s permanent, but if she’s being feral (which is often,) they’re definitely showing.
